Instructions:

  • Rinse the dried butter beans under cold water, then soak them for 24 hours in a large bowl filled with enough water to cover the beans and leave a 5cm space above. This is important because the beans will absorb a significant amount of water and expand in size.

  • In a large casserole dish with a cover, boil the soaked butter beans until they are tender. Reserve 2 cups of the cooking water.
