In my roles as a mental health counselor, a leadership lecturer, and a practitioner of cooking therapy, my culinary journey has led me to treasure heirloom recipes—culinary treasures that transcend time and generations. These recipes, passed down through the ages, have been lovingly entrusted to me. Some bear the imprints of my mother's touch, while others were discovered through friendships and the vast virtual realm. Yet, within this treasure trove, a collection of exceptional essence emerges—gifts from the matriarchs of my heart: the cherished Daphne, the wise Artemis, and the endearing Vasiliki, whose name resonates in its four letters.


As they gathered around the table, a symphony of flavors and tradition unfolded. Aunt Artemis, graced with the elegance of age, claimed her seat, offering sage culinary guidance. Their creations were not merely dishes; they were marvels that painted joy on our palates. Often, the setting was the tranquil Mati, embraced by pines. Generations converged—children, grandchildren, daughters-in-law, sons-in-law—united by their appreciation for these culinary wonders.


Spinach Tart Recipe:

Ingredients:


For the crust:

  • 200g Greek yogurt

  • 240g Butter

  • 6g Baking powder

  • 240g Hard wheat flour

  • 240g All-purpose flour

  • 4g Salt

  • 20g Olive oil

  • 20g Parmesan cheese

For the filling:

  • 500g Fresh spinach

  • 150g Cream cheese

  • 150g Greek feta cheese

  • 150g Parmesan cheese

  • 5 Fresh onions with the green leaves (Scallions)

  • 1 Dry onion

  • 1 tablespoon Dill

  • 2 Eggs

  • 200g Fresh cream

  • Pepper

  • 4 tablespoons Olive oil for sautéing

Instructions:


Prepare the Crust:

  • In a food processor, combine the flour and salt.

  • Add the cubed butter and pulse until the mixture resembles coarse crumbs.

  • Incorporate the yogurt, olive oil, and Parmesan. Blend the ingredients until the dough comes together.

  • Form the dough into a disc, wrap in plastic wrap, and refrigerate for 10 minutes.


Prepare the Filling:

  • Finely chop all the herbs,

  • In a pan, heat olive oil and sauté the chopped onions and scallions until they become translucent.

  • Add the dill and chopped spinach, cooking until the spinach wilts.

  • Remove from heat and allow it to cool.

  • In a bowl, whisk together cream cheese, Parmesan cheese, Feta cheese, fresh cream, eggs, and a dash of pepper. Since Feta and Parmesan are salty cheeses, exercise caution with additional salt.

  • Incorporate the sautéed spinach mixture and mix thoroughly.

Assemble the SpinachTart:

  • Preheat the oven to 375°F (190°C).

  • Roll out the chilled dough on a floured surface to fit your tart pan.

  • Skillfully roll the dough into the pan, gently trimming any excess, creating the canvas for Spinach Tart's masterpiece.

  • Use a fork to puncture the crust, allowing steam to escape while baking, ensuring an even appearance.

  • Bake the crust until it's lightly brown. Allow it to cool before adding the filling.

Bake the Spinach Tart:

  • Position the tart on a baking sheet and bake for 40 minutes, or until the filling is firmly set and the crust exudes a delightful golden brown hue.
